Join Scandinavia House and Björk Café & Bistro on October 24 for a food demo and book talk by Nichole Accettola, the chef behind San Francisco’s beloved Kantine, to celebrate the release of her book Scandinavian Everyday! Recipes demonstrated from Scandinavian Everyday will include mung bean fritters with goat chese, harvest braise, and flødeboller (Danish meringue puffs).
In Scandinavian Everyday: Vibrant, Simple Meals from Northern Europe (Ten Speed Press, 5/19/2026), chef and IACP award-winning author Nichole Accettola presents contemporary Scandinavian cooking as it is truly lived: uncomplicated, practical, and deeply connected to the rhythms of daily life. Drawing inspiration from the cuisines of Denmark, Norway, and Sweden, the book offers bright, pared-back recipes made with whole grains, vegetables, and thoughtfully sourced meat and fish, all adapted for the American kitchen and grocery store.
After spending years working in Italian and French restaurant kitchens, Accettola made the move to Copenhagen, Denmark, ready to embrace a new pace of life. While diving deep into the world of Scandinavian food, she found that her approach to cooking was entirely reframed. It was no longer about making elaborate dishes to impress restaurant diners, it was centered around connection: to the seasons, to the people at the table, and to the place she was living.
Much like the food served at Kantine, the recipes in Scandinavian Everyday are rooted in tradition, but have been updated to reflect the way we cook and eat now.
